Moo Shu Pork Stir Fry

Recently I signed up for a CSA, community supported agriculture, so for the next fifteen weeks I get to pick up a box of farm fresh produce. Not only do I want to use this to bring more variety to my fruit and veggie options, but I want to use it to inspire my meal plans for the week.

My first box included radishes, peas, cherries, kale, apricots, and rainbow swiss chard. The radishes and peas inspired me to revisit moo shu pork in the form of a stir fry. Served with a hoisin mayo and fried wonton chips the stir fry was a rich and veggie filled dinner. The pork and vegetables would also be great over rice or served as lettuce wraps, play around with it and see which way suits your dinner table.



Moo Shu Pork Stir Fry

Serves: 4-5
Total Time: 1 hour

  • 1tbsp Olive oil
  • 2c Baby bella mushrooms, diced
  • 4c Red cabbage, sliced
  • 3 Green onions, sliced, whites and green separated
  • 1c Radishes, sliced thin
  • 3/4c Fresh peas
  • 1lb Ground pork
  • 1tsp Salt
  • 1/8tsp Nutmeg
  • 1/4tsp Cinnamon
  • 1/8tsp Red pepper flakes
  • 1/4c Soy sauce
  • 1/4c Hoisin sauce, divided
  • 1/4c Mayonnaise
  • Salt and pepper TT

  1. Wash, slice, and dice your produce. For the cabbage I cut 1/2 a red cabbage into quarters and then thinly sliced each quarter, that brought me to about 4c.
  2. In a large skillet over medium high heat, add the olive oil.
  3. Once the oil is hot, add the whites of the green onions and sauté until fragrant.
  4. Add the cabbage and mushrooms to the onion whites, and cook until the cabbage starts to wilt and release water.
  5. Add the ground pork to the cabbage mixture along with salt, nutmeg, cinnamon, and red pepper flakes, use a wooden spoon to separate the meat and cook until browned.
  6. Once the meat has browned, add the soy sauce and 2tbsp of hoisin sauce.
  7. Add the peas and radishes, cooking briefly. I like to leave some crunch to the vegetables at the end. The radishes can also be added after cooking to be eaten raw.
  8. Salt and pepper TT
  9. In a small bowl mix the mayonnaise and 2tbsp of hoisin sauce.
  10. Serve over rice, lettuce wraps, or wonton chips with hoisin mayo and sliced green onion.
  11. Enjoy!
