This has been the summer of apricots. We have gotten dozens of the tart little fruit through our CSA this summer and they have been delicious in danishes, yogurt parfaits, as their own for a snack, but I wanted to do something different with them. So this past week when I remembered I had country style boneless pork ribs in the freezer and received apricots and peaches in my weekly produce box, I decided to try to make a fruity sauce for my ribs.
The ribs were perfect fall apart tender, held together by a delicious crust on the bottom, and the tangy and spicy sauce I made brought a lot of bright flavor to the ribs. I have sauce leftover and will be trying them on chicken wings tonight. I’ll keep you updated!
While the ribs did their first stint in the oven, I worked on the sauce. I started by slicing the apricots and peaches and removing the pits. I left the fruit and onions in large pieces so I could cook it down slowly and blend it down later.
The apricots and donut peaches had so much tang and sweetness on their own I didn’t have to add much to the sauce so it was an easy dinner, though the ribs themselves take a while to cook.
Country Style Boneless Pork Ribs
Time: 2 hours
- 2lbs Boneless country style pork ribs
- 2tsp Kosher salt
- 1/2tsp Black pepper
- 2c Apricot peach bbq sauce
- Preheat the oven to 300°
- In 9×13 dish with high sides, salt and pepper the ribs. Bring to room temperature while the oven preheats.
- Cover the dish with foil and bake in the oven for 1 hour and 30 minutes.
- After 1.5 hours remove the dish from the oven, raise the oven temperature to 350° and drain the excess fat from the pan.
- Coat the ribs in the apricot bbq sauce.
- Put the pan back in the oven uncovered for 20-30 minutes.
- Allow the ribs to rest for 10 minutes before serving.
Apricot Peach BBQ Sauce
Time: 45 minutes
- 1lb Apricots, cut and pits removed
- 1/2lb Peaches, pits removed (I used donut peaches)
- 1/2 Yellow onion, large dice
- 1/2lb Tomato, large dice
- 1tbsp Olive oil
- Juice of one orange
- 2tbsp Brown sugar
- 1tbsp White vinegar
- 1tbsp tomato paste
- 1tsp Worcestershire sauce
- Salt TT
- In a large sauté pan over medium heat, add the olive oil.
- Once the oil is hot add the onion, apricot, peach, and tomato.
- Once the onion starts to brown around the edges and becomes fragrant, turn the heat to medium low.
- Add the orange juice, vinegar, brown sugar, and tomato paste.
- Turn the heat to low, stirring and smashing the fruit occasionally.
- Simmer for 20 minutes.
- Once the sauce has begun to break down and starts to look mushy and sticky, add it all to a blender, add the worcestershire sauce, and salt.
- Blend to a smooth sauce.
- Enjoy over your favorite bbq items!
